MOMables Pot Roast (GF)

I love my crock pot. A lot. It's no secret that it is one of my favourite kitchen things EVER. I've made roasts in it and they've been good, but this MOMables roast was something else. My goodness, was it delicious.

I don't do gravy often, and most "beef" gravy I tend to dislike. The ingredients for this roast were simple enough, but also had a few things that made me feel like this might be better than roasts with gravy I've had in the past.

I was right.

Hubby and I worked together on this one. Basically I chopped a few things and read out what we were supposed to do since we were juggling the children between us while prepping the meal. Squiggle wanted to be held a lot and my carrier was in the car. Since I had help, though, I didn't mind.

The meal turned out FABULOUS. Both children enjoyed the food, and so did hubby! (Obviously, I liked it too!) I planned on using the leftovers for another MOMables meal, but we enjoyed this so much we just wanted to eat it this way.

We didn't puree all the veggies (as you can see from the pictures), and we served it with couscous. If you're curious, the gravy didn't taste super tomato-y, though it does look it. This is actually really awesome, because I hate tomatoes. (Yes, I know.. picky picky!)

MOMables GF Zucchini Au Gratin

I had been eying this MOMables recipe for a while, and finally had the opportunity to make it. I followed the suggestion of serving with a whole roasted crockpot chicken, and made a whole chicken in my crockpot to go with it. One of the quickest and easiest meals imaginable!



I made my mixture:

.... and this is where it stopped being super quick and easy. It WOULD have been had I had almond meal like I thought I did. I apparently did not have any, so I grabbed my mortar and pestle, then ground up almonds until it was really fine. Otherwise, it would have been super quick and easy!


Sprinkled that on top and baked again.


VOILA!



Seriously easy, and very yummy! The kids both loved it. The only complaint hubby had was I missed a few pieces of almond and so he got some tiny pieces of almond he had to chew. ( wah. )

MOMables GF Avocado Stuffed Burgers

I'm a sucker for a good burger, and the MOMables recipe for avocado stuffed burgers looked awesome. I love salsa burgers, but I do hate tomatoes, so I wasn't sure how these would be since they had sundried tomato in them.


First things first: if you made these, odds are they will be a brighter green. We only had our black sea salt (out of pink and gray), so I took a picture of the sea salt to show you why the avocado mixture was going to look less-fresh. It was nice and green before the salt was mixed in.

Hubby didn't start the grill first like the recipe suggested, but rather after he made the mixture for inside the burgers. In retrospect, he wished he waited until he had EVERYTHING ready to assemble (meaning patties formed and ready to be made), as the grill died out and we had to finish the burgers in the oven. I'm thinking the recipe was written with a gas grill in mind (though it didn't mention it).

Hubby used rolled the meat out into a "log" and cut even slices, then made uniform sized patties by squishing them under a cereal bowl in a larger bowl.


 

The burgers looked and smelled amazing, but we really didn't care for the avocado mixture. The idea is great, and our family would have loved it without the sundried tomatoes. Sundried tomatoes just have that unique taste, and they aren't for everyone. Sadly, they are not for our family.

We fully intend on making these again (sans sundried tomatoes).

Surprisingly, one person devoured the sundried tomato mixture... Bobble. That kid loves interesting flavours, and I guess it shouldn't really shock me he loves sundried tomato!

MOMables Homemade Chicken Nuggets

My children are huge fans of meat in finger food form. Fish sticks, sausage links, chicken strips, chicken nuggets... yeah. All of the above. We dislike the processed foods aspect, and we buy the organic nuggets when we do buy them. Still those are expensive. We make chicken strips from scratch, but we had never made nuggets from scratch.


MOMables changed that with their chicken nugget recipe. The recipe can be gluten free if you use GF breadcrumbs, too. We didn't have ground chicken, but we did have chicken breast that needed to be used so we used our blender and ground it ourselves.




My husband was the chef for nuggets, so I had the opportunity to take more pictures of the process since I didn't have to worry about potentially burning food (though he did fry some of the nuggets a bit long).



You can bake the nuggets or fry them. We opted to fry them, then made popcorn with oil later that night.



Sadly, hubby only made enough for the kids (...I may have stolen a couple nibbles), and froze the rest of them. He said that it was super easy to do and much cheaper than buying them in the store, so we will do this from now on.


The thing that took the longest was cleaning our immersion blender after using it on the chicken breasts. We don't have a grinder, a food processor or even a standard blender. That aside it was easy-peasy.

No action shots of the kids eating them, as they were devoured way too quickly. I actually had to keep trying to get a shot of the inside of the nugget because Bobble kept swiping them as I was focusing the camera! They also tasted soooooo much better than the organic nuggets we had been buying.

MOMables (GF) Chicken with Grape Sauce

In the interest of trying something new, I decided to test out the Chicken with Grape Sauce recipe I got as a meal option in my grain-free MOMables menu. Before I go any further, I must tell you that I tried this out for my family, not for me. I have some really weird food quirks, and one of them is that it cannot be a sweet food unless it's a dessert (or fresh fruit by itself). I went into this one assuming I wouldn't like it.



About midday, I decided I didn't feel like cooking anymore. I asked my husband if he would mind cooking instead, and he said he would. I helped him with some prep work (washing/slicing grapes) and reading the recipe to him while he cooked. That totally counts as helping, right?

This is not a free menu option, so the full recipe will not be shared.


Prep work was really simple, though. Very, VERY simple.


We paired it with some mei fun (rice noodles) and green beans. Good choices. This would also have been good over rice.

Hubby was surprised at how easy it was to make. He also commented that he really liked the dish a lot, and would love to have it again. Knowing my quirk, he asked what I thought. I told him that it was not something I would ever request, but I would have no problem eating it again if he was craving it. That says a lot, actually... I normally won't even eat something that has a hint of sweetness.



Personally, I'd like to try it with cranberries in lieu of grapes. Hubby says that might be too tart, but I thought this was too sweet for my taste (of course, I don't like sweet meals).

The kids loved it and ate very well. Bobble was too all over the place to get any good pictures, but I got a couple of Squiggle that weren't blurry. (Seriously, these kids are always moving!)

MOMables Black Bean Soup (GF)

I am a sucker for black bean soup, and it really does get expensive to buy it premade (and even more to get it in a restaurant). When I saw the MOMables GF recipe for Black Bean Soup, I simply had to try it. It sounded delicious, we had all the ingredients, and it was apparently very quick to make! Also, with one super simple alteration, the recipe could be vegan. Easy peasy!


My hubby took the kids for a jog, and I started dinner. Dinner involved opening cans (unless you soaked and cooked your own black beans, stirring things while they heated, and then serving. Yes, it was really that simple.

I was astonished at how easy it was! Even more so at the fact that this meal costs about $7.50 if you're buying store brand items and full price.


I was even more surprised that Bobble and Squiggle both ate all their food, and that hubby got seconds while going on about how this recipe was a keeper. I had seconds, myself.

This recipe fed us a lot. In fact, this is what was leftover after dinner (which fed a 1yo, 3yo, and two bowls full for 2 adults):

As you can see, definitely enough for leftovers the next day!

If you're not GF, you could always eat with tortilla chips. We enjoyed this with tortilla chips one night cornbread for lunch the next day, and with cheese quesadillas, too. (MOMables has a free recipe for making GF spinach tortillas, too!)

MOMables Spinach & Cheese mini quiches (GF)

Both of my children love eggs, so when I saw the mini quiche recipe in my MOMables GF Menu, I decided we had to make them. We have fresh spinach growing in our garden, so I was able to just grab a few leaves the night before, too.

This is not one of the free recipes, so this exact recipe will not be shared. It is similar, however, to this free recipe for Crustless Broccoli and Cheddar Quiche "Muffins" that is free.

Bobble helped me count the ingredients out, mix the ingredients, and open the oven door for me. It was so simple, however, there really wasn't much for him to do! I was trying to invent things (such as counting the eggs as I put them in).



They mixed up quickly and cooked quickly. The thing that took the most time was putting them in the pan!

*Tip: Use the (already dirtied) tablespoon to scoop the batter into each mini muffin slot. It's the perfect size!

MOMables Cauliflower Rice

Have you considered going grain or gluten free, but love rice too much to give it up? Cauliflower rice might be a great option for you! It's simple to make, and it tastes great! Bonus, it's veggies for the kids when they might not even realize it!



MOMables has an easy how-to for making Cauliflower Rice, though I'm going to share the recipe below and our experience with it.

We don't have a food processor, so hubby added some water to the 1" pieces and used an immersion blender. When they were the size desired, we dumped that into a mesh strainer and then cooked it after it drained.

MOMables New Grain Free Menu!

MOMables is a fabulous service where you can get menus sent to your email every week. The menus will offer alternatives for lunches for your children so you don't get stuck in that sandwich rut. Yes, there are sandwiches from time to time, but not your plain old lunch meat and cheese.

Sandwiches or not, there is always a fun spin on the foods. For example, "sushi" sandwiches, gluten free fish sticks, and much more.

In the summer time, you get more dinner ideas. The best thing about this service is they not only have a whole week of different meals ready for you so you don't have to try to come up with something new, but the shopping list is all there and ready for you to just print out. There are also tips for what to make extra of to use in the next day's meal.

Recently, MOMables has started offering an alternative to their regular menus (which contain tips for making things allergy friendly), and they now have a grain free option.

Cauliflower Pizza Crust



Want a delicious crust without all the carbs? Maybe you just want a sneakier way to get your kids to eat veggies? This crust might take a bit more prep time than a regular dough, but it's well worth it! The taste is phenomenal, you get extra veggies, and it's not only gluten-free (if you care about that) but grain-free, too!

Cauliflower Pizza Crust
  • 1 head cauliflower
  • 1 egg
  • 1 4 oz. package of herbed goat cheese

Preheat Oven to 400F

1) Heat water (about 1 qt) to a boil while washing and cutting cauliflower into small pieces.

2) Add boiling water to cauliflower in a glass bowl and use an immersion blender and blend until in small particles ("cauliflower rice") and no chunks left.

3) Strain to remove as much water as possible.

4) Place in cheesecloth (optional) and place inside a dish towel (not optional) to wring out the remaining moisture. Too wet and you will have a soggy crust! The cheesecloth just makes it easier to clean the towel when you're done.

5) Place cauliflower back in a bowl and blend in the egg and goat cheese.

6) Press dough onto baking sheet (or pizza stone) that is lined with parchment paper. Shape however you want. Keep the dough about 1/3" thick.

7) Bake at 400F for roughly 40 minutes or until crust is firm and golden brown.

8) Add sauce and toppings, then return to the oven for 10-30 minutes. The more toppings you have, the longer it will take. We added a lot of toppings, so it was about 25 minutes. Bake until the cheese is lightly browned to ensure you cooked out enough moisture.

ALLOW EXTRA COOLING TIME! This pizza retains a lot of heat if you are using a pizza stone, so allow extra cooling time.
